● What is "Hatsushimo"?
Hatsushimo is a representative variety of Gifu Prefecture, and it is a rare rice that is mainly cultivated only in the Mino region of Gifu Prefecture because the soil and climate to be cultivated are limited to low-lying areas above sea level where the soil and climate are relatively clayey and strong.
This name was named because the harvest season was reached when the first frost fell. Rice does not get to the limit, as it increases the taste when there is a difference in temperature. Thanks to that, it has a large grain and has a stable taste, moderate stickiness, and a solid texture.
It is suitable not only for staple foods, but also for sushi, curry rice, pilaf, rice bowls, etc., and because it is delicious even when cold, it has been useful as a high-class sushi rice in Chukyo and Kansai for a long time.
It is said to be a phantom rice because the production is low.
● Why [phantom rice]?
Hatsushimo is called [phantom rice] because the yield is low.
The reason is that the disease resistance and downhill resistance are low, so the creator needs to be very careful.
Moreover, compared to the harvest time of late August for Shizuoka Koshihikari and late September for Niigata Koshihikari, Hatsusimo is much later in November, so unlike other rice, there is a cold period, so it is difficult to manage.
Therefore, there are few producers, and it is not available outside of Gifu, and it is distributed only to sushi restaurants that are particular about rice.
Sushi rice is more sticky and preferable for old rice than new rice.
● Is it delicious?
It is mainly favored by specialty sushi restaurants, and is also nicknamed as "Takumi rice".
Although there are individual differences, it is especially recommended for those who like Sasanishiki because it is a crispy rice.
